1 Yukon Gold Potato
1 Medium Sweet Potato
1 Medium Red Onion
Cabinet Season: chili powder, garlic powder, s/p, cayenne
3 Corn Tortilla
1 c MixGreens
Bolthouse Avocado Ranch Dressing
Preheat oven to 400. Dice potato and sweet potato drizzle with oil and season with cabinet season, place on sheet pan line with foil. Roast for 25-30 min or until crispy.
Slice red onion and sauté for about 5-10 min.
Warm tortillas with a little butter or oil.
Next remove potatoes from oven. On bottom of tortillas place mix greens, potatoes, sautés red onion topping with avocado ranch dressing, serve and enjoy! 🌮🌮
